Dr. Kacie Stull is an Assistant Professor in the Department of Biomedical Sciences at the Kansas College of Osteopathic Medicine, where she teaches nutrition and contributes to the Physicianship and Health Systems Sciences curricula. A Kansas native, Dr. Stull earned both her M.S. and Ph.D. in Food, Nutrition, Dietetics, and Health from Kansas State University. Throughout her graduate training, she taught undergraduate and graduate courses in nutrition and research methods and developed a strong interest in medical education and the translation of nutrition science into clinical practice.
Dr. Stull's academic interests include nutrition, autoimmune and inflammatory conditions, endocrine health, and chronic disease prevention and management. Her doctoral research explored relationships between nutritional status, inflammatory biomarkers, and patient burden in adults with inflammatory bowel disease. She is particularly interested in helping future physicians understand how nutrition influences health across the lifespan and how evidence-based principles can be integrated into patient care. In addition to her academic career, Dr. Stull has more than 15 years of experience as an Advanced Emergency Medical Technician, providing a unique perspective that bridges biomedical science, patient care, and healthcare education.
